Thierry Peurois is a very knowledgeable and well-trained chef. His flair for cooking comes as naturally to him as picking apples in the Autumn.

He grew up in France, where he was the son of the local boulangierre in St. Malo, Brittany. Thierry has worked in Michelin Star restaurants both in London and Germany.
It was in London that he met his lovely wife, originally from Greystones. Love blossomed as did his experience in the food world and he moved to Greystones where he opened a restaurant ‘Le Paysan’, which proved to be a great success.

However, a year ago, he took the very brave decision to change course. He really enjoyed his experience at ‘Le Paysan’ as owner/ chef but felt that his family and personal life demands were not being met, as he was totally consumed by the restaurant.

Thierry and his wife sold the restaurant and set up a ready-to-go meals business still under the name Le Paysan. I was a regular patron of the restaurant in Greystones and was delighted to see Thierry’s products in the local Eurospar in Barrow Street and Spar in Bath Avenue.

They are not only as good as restaurant quality, but also healthy and nutritious. He saw a niche in the market for gluten-free meals, so he does not use wheat products in any of his cooking and there is no wheat to be traced at his premises, he simply runs a wheat-free catering zone.

He is delighted with his new business venture and grateful for the time he can now spend with his family. Two young children are a demanding and fun business, he explains.
His range of soups are still his old favourites, I noticed, leek and potato, his famous seafood chowder and many more, all top quality. I had a dinner party and bought 12 portions of his chowder, heated it and voila, the guests were speechless.

His main courses range from supreme of guinea fowl, with a potato and herb stuffing, monkfish casserole, gently cooked with courgettes and tomatoes in a cream and wine reduction, Madame Peurois’s casserole made with chicken, beef bourguignon, an old favourite and Le Paysan lamb casserole, with a hint of rosemary and thyme, to name but a few.

Thierry runs a very successful outside catering business and caters for the more exclusive function. He will come to your home and cook the entire meal and accommodate the culinary demands of his clients. His prices vary according to the function but his quality and expertise is top-class and he can advise on wines to accompany the experience.

‘Food and Wine Magazine’ said of him ‘Thierry Peurois’s food can save dinner party divas from last minute panic.’ If friends are over and you can’t stretch to outside catering, pick up a few ready-to-go meals, heat and you have the pleasure of a delicious, homecooked meal without all work.

The soups sell for about €4.50 and his ready-to-go gluten-free meals are all about €8.50. They cater for all occasions and supply freezer food on request.
